Ingredients:
Green Yogurt Sauce:
-Garlic 3 cloves
-Green chilies 3-4 pieces
-Mint leaves ¼ Cup
-Yogurt 1 Cup
-Cumin powder ½ tsp
-Olive oil 1-2 tbs
-Cumin seeds 1 tsp
-Red chili powder ½ tsp or to taste
-Turmeric powder ¼ tsp
-Coriander powder 1 tsp
-Ginger garlic paste 2 tsp
-Water 2-3 tbs
-Tomato chopped 1 medium
-Onion slices 1 medium
-Yellow bell pepper julienne ½ Cup
-Capsicum julienne ½ Cup
-Carrot julienne ½ Cup
-Cottage cheese small cubes ½ Cup
-Pink salt 1 tsp or to taste
-Black pepper crushed ½ tsp
Assembling:
-Whole wheat flat bread (Roti) 3-4
-Cooked vegetables
-Green yogurt sauce
Directions:
For Green Yogurt Sauce:
-In blender jar,add garlic,green chilies,pink salt,mint leaves,yogurt and cumin powder,blend well & set aside.
-In frying pan,add olive oil,cumin seeds and mix.
-Add red chili powder,turmeric powder,coriander powder,ginger garlic paste and mix well.
-Add water and mix well.
-Add tomato and mix well,cover and cook until tomatoes are soft.
-Add onion,yellow bell pepper,capsicum,carrot and mix well.
-Add cottage cheese and mix well.
-Add pink salt,black pepper crushed,mix well for 1-2 minutes & set aside.
Assembling:
-On whole wheat flat bread (roti),add cooked vegetable mixture,green yogurt sauce and fold all 3 edges and wrap in butter paper & serve.
